Characteristics: The
soil of the Perrières is difficult to work and
very fragile. The vineyard was abandoned after the phylloxera
epidemic for these very reasons. However, the wine produced
is wonderfully lively and very mineral. It needs at
least two or three years after being bottled to show
its true colours. Since 2000, the wine has been aged
for 18 months in second or third generation oak barrels
without either fining or filtering.
To accompany: It makes a perfect accompaniment
to poultry, white fish and shellfish. A wine for wine
lovers.
