Characteristics: Despite
the fact that the vineyard ‘Les Combettes’
is contiguous with ‘Les Genièvrières’,
the two wines produced are dramatically different. ‘Les
Combettes’ is close in spirit to a wine from north
Burgundy: woody, rich and full-bodied.
To accompany: Like ‘Les Genièvrières’,
‘Les Combettes’ is a wine to be laid down.
As it matures, it takes on overtones of dried fruits,
butter and toast, and is a wonderful accompaniment to
fish and even foie gras.
