Characteristics: All
the gamay plants on the estate are pruned short, ‘en
cordon Royat’, to contain the natural vigorous
growth of this grape variety. This wine has a strong
and robust bouquet, blending spicy (pepper, cinnamon,
cocoa) and woody flavours with leather and animal tinges.
It is reminiscent of the red Mâcons formerly produced
in the Haut Mâconnais.
To accompany: The wine goes well with
terrines and cheese when it is young, and after four
or five years, is a perfect match for game birds.
Ageing/storing/laying down: This wine
should not be drunk for at least two or three years,
to allow it develop its aromas, and can be kept for
five to ten years, depending on the vintage.
